Ingredients:
1 lb. turkey cutlets (about 5)
1/2 cup prepared stuffing, divided (see my recipe for
Italian Herbed Stuffing)
1/4 tsp dried basil
1/4 tsp dried oregano
1/8 tsp dried sage
1 tbsp parmesan cheese, grated
Salt and pepper, to taste
Butter, unsalted, divided
Directions:
Preheat oven to 350°.
Flatten each turkey cutlet using a meat tenderizer until about 1/4”
thick; place 2 tbsp stuffing on top of each cutlet, then roll and place seam
side down in a greased baking dish.
Season the cutlets with basil, oregano, sage, salt, pepper, and parmesan
cheese; place a small pat of butter on top of each rolatini. Bake in the oven for 20 – 30 minutes or until
turkey is cooked all the way through. If
desired, serve with additional stuffing and a turkey gravy for even more
flavor!
