Corned Beef Reubens


Ingredients:
8 slices rye bread
8 tsp butter or margarine, divided
1 lb. corned beef, shaved, divided
1 cup sauerkraut, divided
4 slices Swiss cheese

Thousand Island Dressing
4 tbsp mayonnaise
4 tbsp ketchup
2 tbsp sweet pickle relish
1/4 tsp paprika
Salt and pepper, to taste

Directions:
Heat a nonstick griddle over medium heat.  Butter one side of each piece of bread; top 4 pieces of bread (non-buttered side) with 4 oz. corned beef, 1/4 cup sauerkraut, and 1 slice of Swiss cheese.   Place remaining pieces of bread on top of sandwiches, butter side up.  Arrange sandwiches on griddle and cook until toasted and lightly browned on each side.  Meanwhile, in a separate bowl mix together all dressing ingredients.  Serve finished sandwiches with Thousand Island Dressing for dipping or spread about 2 tbsp. on each sandwich.
