Banana Bread



Ingredients:
1 cup sugar
3 bananas, mashed
1/2 cup butter, unsalted
1 tbsp vanilla
2 eggs
1 3/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Cinnamon, to taste
1/2 cup walnuts, chopped

Directions:
Heat oven to 350°.  In a large mixing bowl, blend sugar, bananas, butter, vanilla, and eggs for 2 minutes.  Mix in flour, baking powder, baking soda, salt, and cinnamon and beat for an additional 2 minutes.  Fold in walnuts.  Pour into greased baking dish and bake for 45 – 60 minutes, or until toothpick comes out clean.  Allow to cool about 5 minutes before serving.
