Honey Mustard Pork Tenderloin


Ingredients:
2 pork tenderloins, about 1 lb. each
1/3 cup Dijon mustard, course ground variety
2/3 cup honey
1 pinch cayenne pepper
Salt and pepper, to taste

Directions:
In a mixing bowl, mix together the Dijon mustard, honey, cayenne, salt, and pepper; pour marinade into a large resealable bag and add pork.  Coat the pork completely in the marinade then place in fridge.  Let the pork marinade at least 2 hours or overnight.  After the pork has finished marinating, preheat the oven to 400°.  Remove the pork from the bag and place it in a baking dish; reserve marinade.  Cook the pork for 20 – 30 minutes per pound in the oven (when done the center of the pork will be slightly pink).  Meanwhile heat the marinade in a small sauce pan until cooked through, and serve over top of pork for extra flavor!
