Cheese Manicotti

Ingredients:
14 manicotti noodles
1 large jar spaghetti sauce (or use my recipe)
1 (16 oz.) packages ricotta cheese
3 cups shredded mozzarella cheese
1 cup parmesan cheese
2 cloves garlic, minced
1 egg, beaten
Basil, parsley, oregano
Salt and pepper, to taste

Directions:
Preheat oven to 350°; grease a large baking dish. Boil water and cook noodles according to package directions. Allow noodles to fully dry before filling. In a bowl, combine the ricotta, 2 cups mozzarella cheese, 1/2 cup parmesan cheese, the egg, garlic, and seasonings; fill each manicotti with a good amount of ricotta mixture. Place filled manicotti in greased baking dish; cover with spaghetti sauce and remaining cheeses. Cover dish with aluminum foil and bake for 40 minutes, or until bubbly and cheese has browned.

This is a great base for your own creations! Try adding beef, sausage, or even crab or lobster; different cheeses or different sauces for something extra special. It never has to be boring when it’s Manicotti night!!!
