Caesar Salad Dressing

This is the classic creamy style Caesar salad dressing BUT... without the raw egg!  You'll be sure to enjoy this dressing the next time you crave a Caesar salad.




Ingredients:
1/2 a lemon, for juice
1/2 tsp Dijon mustard
1/2 tsp Worcestershire sauce
1/2 tsp anchovy paste
1 clove of garlic, minced
1/4 tsp fresh ground black pepper
1/4 cup mayonnaise
1/4 cup olive oil
1/4 cup parmesan cheese, grated

Directions:
In a mixing bowl, juice the lemon; whisk together with Dijon mustard, Worcestershire sauce, anchovy paste, garlic, and black pepper.  Add mayonnaise and whisk until well combined; slowly whisk in olive oil until well blended.  Stir in parmesan cheese and chill until ready to serve.

Note: This recipe makes enough for a Caesar salad to serve 4.  Just toss the dressing with desired amount of lettuce before serving!
