Mini Chicken Burgers


Ingredients:
1 lb. ground white meat chicken
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp cayenne pepper
Salt and pepper, to taste
1/4 cup barbeque sauce
4 slices cheddar cheese, quartered
2 cups baby greens
2 small tomatoes, sliced
4 tbsp honey mustard, divided
8 whole wheat dinner rolls, split

Directions:
Mix together ground chicken, garlic, onion, cayenne, salt and pepper, and barbeque sauce; mix until completely combined.  Form small patties large enough to fit dinner rolls.  Grill chicken patties until completely cooked through; melt 2 quarter pieces of cheddar cheese on top of each patty.  Place chicken burgers on bottom bun and top each with 1/4 cup baby greens, sliced tomato, and honey mustard sauce. 

Serves 4 (2 mini burgers each).  To continue with the healthy burger theme, serve with roasted potato slices seasoned with favorite spices!  These also go great with a side salad, pasta salad, beans, and fresh fruit.
